This watermelon salad is the
perfect summer salad. As a light lunch, as a formal dinner salad, or
made up in a large quantity to take to the summer picnic, everyone
will ooh and aah over this recipe. I make my version with that
classic southern onion, Vidalia.
Toss together watermelon, onion, fresh Jalapenos, (or for a milder kick, Anaheim peppers) Basil leaves and
crumbled goat cheese. Dress with a good quality olive oil to bring
out the flavor of the goat cheese, and lime juice. Then get ready to
be amazed...
