If you are Southern you know fritters. And here is my absolute favorite fritter. Cream cheese cauliflower topped with parsley kale walnut pesto. When your friends bite into this, they will go OMG. Believe me.
You will need 1 egg, bread crumbs,pesto ( any flavor you like) cornstarch, cream cheese and about 1/4 of a head of cauliflower.
Blend the egg and a half package of cream cheese and a tablespoon pesto.
Chop the cauliflower coarsely. I only use the florets but you can use the stems too.
Add the cauliflower and and a handful bread crumbs and (sorry that is how I measure) two tablespoons
cornstarch and blend well. Add salt if you like. This will make four or five fritters depending on what size you make them,
Drop the batter into a warm oiled pan on medium heat .Serve when browned, with or without pesto topping, and watch your fritter loving friends be amazed.
