I most often eat it at breakfast. A wonderful substitute for syrup on pancakes, buttered biscuits, and it is divine on oatmeal.
2 ripe juicy peaches
2 tomatoes
2 medium vidalia onions
1 lemon
1 lime
1 1/4 cups confectioners sugar.
Chop the peaches, onions and tomatoes coarsely.
In a saucepan combine them with the sugar and juice of the lime and lemon.
Bring to a boil, turn down the heat and simmer about 35 minutes.
Let cool and store in a jar or air tight container. You can freeze this if you need to.
Once you have tasted this you will think of a variety of ways to enjoy it. The flavors complement each other and enhance whatever you serve it with. Peaches are in season now and there couldn't be a better time to try this!
