Grits are the one dish every Southerner loves. I have a ton of grits recipes but these baked buffalo blue cheese grits with chicken and garlic are hands down my favorite. They taste even better the next day and warm up well at tail gate parties.
Simple to make, here is what you need:
1 cup stone ground grits ( I use organic grits that are a combination of white and yellow)
1/2 to 1/4 cup buffalo wing sauce
1/2 cup pulled chicken breast
1/4 cup blue cheese
1tsp butter
1 clove garlic chopped fine
3 cups water
salt to taste
In a saucepan bring water to a boil, add grits and turn down to simmer stirring occasionally.
After about five minutes when the grits have thickened, add garlic, chicken, blue cheese, and wing sauce. Remove from heat, stir well and pour into a loaf pan. (An aluminum loaf pan will travel well to the game).
Place in oven preheated to 350 degrees and bake for about 30 minutes.Let cool slightly, cut in squares and serve to your fans...
Baked grits have much richer flavor than grits just cooked on the stovetop, and in the South, grits are generally baked. Good any time of the day, baked grits are also known as grits cakes and often eaten much as one would a pancake at breakfast. The one pictured here is the same recipe as above using only grits, water, butter and salt. I added a little onion because I like it. Cooked on the stove, then baked.
These I topped with an amazing Sourwood Honey that came from local hives right here in downtown Nashville. The city is very green and city beekeeping is becoming quite popular. If you have never tried genuine stoneground grits you don't know what you are missing.
